Flourless Vegan Brownies

  • 400g canned red beans drained
  • 4 bananas
  • 4 tablespoons agave nectar
  • 8 tablespoons coconut oil
  • 60g buckwheat flakes
  • 160g unsweetened cocoa powder
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 200g dark chocolate for frosting
  • shredded cononut or almond flakes for frosting

Preheat oven to 180°C. In a large bowl, blend all ingredients (except those for frosting) for a smooth thin batter. Pour the batter into the pan covered with baking parchment paper and bake for about 35 minutes (adjust according to experience with your oven). Pour over the dark chocolate frosting and sprinkle with coconut or almond flakes.

Cheese and Spinach Quiche

  • puff pastry dough
  • 200g sour cream
  • 2 eggs
  • salt
  • pepper
  • 50g spinach
  • 150g shredded Edam-type cheese

Preheat oven to 180°C. Put pastry dough into a round pan covered with baking parchment paper and bake for 20 minutes. Meanwhile, stir eggs with cream, salt and pepper. Pour on the partially baked pastry and add spinach and cheese on top. Bake another 20 minutes.

Apple Cake

  • 750g apples
  • 4 tablespoon raisins (or dried cranberries)
  • 4 tablespoons walnuts
  • 2 cups all-purpose flour
  • 1 cup sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 package of cinnamon flavored sugar (20g)
  • 1 package of vanilla flavored sugar (20g)
  • 1 package of baking powder (12g)

Preheat oven to 180°C. Peel the apples, remove seeds and cut to small pieces. You can put them in lemon water to soften the apples and keep light color during baking. Wash raisins in hot water and chop the walnuts. Drain the apple pieces and mix with other ingredients. Grease a pan, pour the batter in and bake for about 45 minutes (adjust according to experience with your oven). Pouring a chocolate frosting is optional.

Carrot Cake

  • 4 eggs
  • 1 1/2 cup vegetable oil
  • 2 cups sugar
  • 1 package vanilla flavored sugar (20g)
  • 2 cups all-purpose flour
  • 1 package baking powder (12g)
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 3 cups shredded carrots (medium)
  • 1 cup chopped walnuts
  • powdered sugar for sprinkling

Mix eggs with oil and both types of sugar, add flour mixed with baking powder, salt and cinnamon and stir properly. Add the carrots (with the juice) and chopped walnuts and mix only gently now for a thick batter. Preheat oven to 180°C. Pour the into the pan covered with baking parchment paper and bake for about 25 minutes (adjust according to experience with your oven). Sprinkle immediately with powdered sugar.

Gingerbread Cake

  • 1 package gingerbread flavored baking powder (20g)
  • 1/3 cup coconut oil
  • 2 tablespoons cocoa powder
  • 1 cup dark sugar
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 egg

Preheat oven to 150°C. Mix all ingredients into a light batter and pour the into the pan covered with baking parchment paper or into a greased pan sprinkled with flour. Bake for about 20 minutes (adjust according to experience with your oven).

Sugar can be replaced with honey or agave nectar. All-purpose flour can be replaced with spelt flour.
